
Creamy Lion's Mane Mushroom Pasta
10 ounces bucatini pasta
1 Tbsp butter
5 cloves garlic, diced
1 large onion, diced
6 sprigs fresh thyme
1 cup Lion's Mane mushrooms, cleaned & shredded *see note below BEFORE starting
1/2 cup heavy cream
1/2 cup grated parmesan cheese

There are two options for your lion's mane mushrooms: sauté lion's mane mushroom using Simple Lion's Mane Mushroom Recipe first OR add the lion's mane to the skillet to cook down with the cream before adding the pasta (step 4 below).

Bring a large pot of water to a boil and cook the pasta according to the directions on the package. Be sure to save at least 1 cup of pasta water before draining!

In a cast iron skillet, melt butter then saute onion and garlic until fragrant. Add thyme sprigs to the mixture and let flavors cook together.

Add all the mushrooms and cream to skillet. Allow the cream to simmer and cook down the mushrooms then add the pasta to the skillet.

Toss the pasta in all the ingredients and add a little of the saved pasta water to the skillet to thin out the sauce, if needed. Finish with parmesan cheese and stir to incorporate. Prior to serving, remove thyme sprigs and discard.

Garnish with extra parmesan cheese and cracked black pepper.
*NOTES:

Simple Lion's Mane Mushroom Recipe:
6 Tbsp salted butter, divided
3 Tbsp avocado oil, divided
6 sprigs of fresh thyme, plus more for topping
4 cloves garlic, finely minced
8 ounces lion's mane mushrooms, washed & shredded

Take a lion's mane mushroom and gently begin to split it in half by pulling it apart with your fingertips. Pull the mushrooms into several smaller pieces.

Begin by sauteing 2 Tbsp butter, 1 Tbsp avocado oil, garlic, and thyme sprigs on low heat in a cast iron skillet. Continually move around the thyme and garlic to prevent burning. Sauté this for about 5 minutes then remove the thyme sprigs. Using a slotted spoon, you may remove the garlic if you feel that they've on the verge of burning.

Add the mushrooms to the skillet, taking care to not overcrowd the skillet. You may have to cook in three separate batches like I did. Let the mushrooms sit on one side for 3-4 minutes so it gets nice and crispy brown then flip and repeat. Repeat until all mushrooms have been cooked. You'll need to add more butter and oil with each batch.
